8:15am Setup
(wipe tables, cover with table clothes, place food signs, etc.)

8:30am -Receive dishes
(refrigerate or stage to warm), cut desserts in serving sizes

9:00am – Prepare lemonade and iced water

10:00am – receive dishes
(refrigerate or stage to warm), cut desserts in serving sizes

11:00am – warm up dishes, assemble any dishes needing it (salads, dips, etc.)

11:15am – Supervise high schoolers:
Move food from the main kitchen to the food stations, group food, place utensils next to each dish
Place cups, napkins and utensils on the appetizer, main dish, dessert tables
Bring lemonade and water jugs to the drink tables with cups next to it

12pm – Serving Meat

1:30pm – Clean up team:
Discard or save food, place food in the refrigerator
Wipe green tablecloths and let it dry
Fold green tablecloths; bring to the main kitchen and put away
Remove all black tablecloths and place in a bin to be washed later
Wipe tables if needed
Collect dirty utensils and dishes. Bring all items to the main kitchen
Wash utensils, plates, bowls, jugs. Wipe dry and put away
